Black Magic Whoopie Pies

INGREDIENTS

  • 1/3 Cup avocado puree (avocado mixed with water in blender until smooth)

  • 1/3 Cup liquid egg whites

  • 6 Tbsp coconut sugar

  • 2 Tbsp unsweetened applesauce

  • 1 tsp vanilla

  • 1/2 Cup unsweetened cocoa powder

  • 1/3 Cup whole grain pastry flour

  • 1/2 tsp baking soda

  • 3 Tbsp stevia sweetened dark chocolate baking chips - optional

  • Sea Salt - optional

  • 12 Tbsp nonfat whipped topping 

 

INSTRUCTIONS

  • Preheat oven to 350 degrees.

  • Line a baking sheet with parchment paper.

  • Combine wet ingredients (avocado puree through vanilla) in a small mixing bowl.

  • Combine dry ingredients (cocoa powder through baking soda) in a separate small bowl.

  • Stir dry ingredients into wet ingredients and mix just until combined.

  • Fold in chocolate chips.

  • Drop by even scoops to make 12 mounds on prepared baking sheet.

  • Flatten slightly with the back of a spoon, and sprinkle with sea salt, if using.

  • Bake 10-12 minutes until slightly firm when lightly pressed.

  • Remove to a cooling rack to cool completely.

  • To make whoopie pies, sandwich 2 cookies together with 2 Tbsp nonfat whipped topping. 

 

Total recipe = 6 whoopie pies

Per whoopie pie - 1 gram protein, 23 grams of carbs, 6 grams of fat

For 1 plain cookie - 1 gram protein, 10 grams of carbs, 3 grams of fat
