Crockpot-Orange Glazed Chicken Meatballs

Sweet & salty! Reminds me of orange chicken from a Chinese food restaurant. I ate my meatballs over brown rice and a side of steamed broccoli. It really hit the spot!

 

Ingredients

  • 1 lb Ground Chicken

  • 1/2 cup Quick Oats

  • 1 Egg

  • 1 tsp Basil

  • 1 tsp Parsley

  • 1 tsp Garlic Powder

  • 1 Tbsp Dried Onion

  • Salt & Pepper to taste

  • 1/2 cup No Sugar Added Orange Marmalade (I purchased Smucker’s Brand)

  • 1/4 cup Liquid Aminos (Tastes just like soy sauce)

  • 2 Tbsp Stevia – Powder

  • 1/4 cup Water

  • Juice of an Orange

Instructions

  • Combine ground chicken, oats, egg, & seasonings in a large bowl. Mix well. Use your hands, get dirty! Once combined, roll them into 1″ balls and place into the crockpot.

  • Place the meatballs in the bottom of the crockpot, close enough together so you can pour sauce over them and cover them completely.

  • In a separate bowl, combine orange marmalade, liquid aminos, stevia & water into a medium bowl. Whisk together & then pour over the meatballs in the crockpot. Slice an orange in half and squeeze the juice directly onto the meatballs, you can add orange zest if you want too!

  • Cook on high for 4-5 hours

Serve over rice with a vegetable, or as an appetizer! 4 balls = 1 serving, makes about 4 servings.
