Okay, confession: I hate beets. Bitter and earthly, I can’t help but be repulsed by any dish that contains these little red root vegetables. However, as a nutrition student I cannot deny the numerous health benefits that can be attributed to regularly consuming beets. A simple google search on the “health benefits of beets” produces hundreds of websites that highlight the improvement to cardiovascular, digestive, neuromuscular, and cognitive wellness by eating beets. So how does one consume beets to enjoy the health benefits without gagging on their bitter taste? After a lot of experimenting, I have found this smoothie concoction to be the only way. Creamy almond milk, spicy ginger, and sweet banana make this beet smoothie a breakfast go to and adding the beet juice not only packs it with nutrients, but gives it a ruby-red color that is downright decadent. ¼ cup organic 100% beet juice
1 c. unsweetened almond milk
1 large banana
Sprinkle of ginger
1-2 scoops of plant based protein powder
Throw everything in blender and mix until smooth.
